Connemara resurrects the tradition of peated Irish whiskies and double distillation. Long ago many more Irish whiskies were double distilled however widespread industry changes and consolodation of distilleries meant that this method was lost. All Cooley whiskies are double distilled making for added complexity and depth that is all too ofter lost.
